Ingredients
- 1.5 lbs large shrimp, peeled & deveined
- 4-5 guajillo chiles, stemmed & deseeded
- 6-8 árbol chiles, stemmed
- 3 ripe Roma tomatoes
- 1/2 white onion, roughly chopped
- 4 cloves garlic, peeled
- 1/2 cup chicken or vegetable broth
- 2 tbsp olive oil
- Salt to taste
- Cooked white rice, for serving
- Fresh cilantro, chopped, for garnish
- Lime wedges, for serving
Instructions
- Boil guajillo and árbol chiles with tomatoes until soft (about 10 mins).
- Blend softened chiles, tomatoes, onion, garlic, and broth until very smooth.
- Strain the sauce through a fine-mesh sieve into a bowl; discard solids.
- Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook 1-2 mins per side until pink.
- Pour the strained sauce over the shrimp. Simmer for 5-7 minutes, allowing sauce to thicken slightly.
- Season with salt to taste. Serve immediately over white rice, garnished with cilantro and lime.
