- 1 cup shredded mozzarella or Oaxaca cheese
- 0.5 cup cooked, shredded pork (carnitas style)

- For Curtido Slaw:
- 3 cups shredded cabbage
- 0.5 cup shredded carrots
- 0.25 cup thinly sliced onion
- 0.5 cup apple cider vinegar
- 0.25 cup water
- 0.5 tsp dried oregano
- 0.25 tsp red pepper flakes (optional)
- 0.5 tsp salt
Instructions
- Prepare curtido: Combine all slaw ingredients. Mix well and let sit for at least 30 minutes.
- Make masa dough: In a large bowl, mix masa harina and salt. Gradually add warm water, mixing until a soft, pliable dough forms. It should not be sticky.
- Prepare fillings: Mix refried beans, shredded cheese, and shredded pork in separate bowls. You can also mix them all together for 'revueltas' style.
- Form pupusas: Lightly oil your hands. Take a golf-ball sized piece of dough, flatten into a disc. Make an indentation in the center.
- Stuff and seal: Fill the indentation with about 1-2 tablespoons of your desired filling. Carefully fold the dough over the filling and seal, forming a ball.
- Flatten: Gently flatten the filled ball into a disc about 1/4-inch thick. Be careful not to crack the edges.
- Cook pupusas: Heat a lightly oiled griddle or cast-iron skillet over medium heat. Cook pupusas for 4-6 minutes per side, until golden brown and cooked through.
- Serve immediately with curtido and salsa roja (optional).
