Ingredients
- 1 cup granulated sugar
- 1/4 cup water
- 4 large eggs
- 1 (14 oz) can sweetened condensed milk
- 1 (12 oz) can evaporated milk
- 1/2 cup strong brewed coffee, cooled
- 1 tsp vanilla extract
- Pinch salt
Instructions
- Preheat oven to 350°F (175°C). Prepare a water bath by placing a large roasting pan on the middle rack.
- For caramel: heat sugar and water in a saucepan over medium heat until golden amber. Pour immediately into a 9-inch round pan or 6 ramekins.
- In a large bowl, whisk eggs. Add condensed milk, evaporated milk, cooled coffee, vanilla, and salt. Mix until smooth.
- Pour the flan mixture over the hardened caramel. Carefully place the flan pan/ramekins into the roasting pan.
- Fill the roasting pan with hot water halfway up the sides of the flan pan/ramekins.
- Bake for 45-55 minutes, or until edges are set but the center jiggles slightly. Cool completely.
- Chill for at least 4 hours or overnight. To serve, run a knife around the edge, invert onto a plate.
Pro tip: Ensure your coffee is strong and cooled to avoid curdling the milk mixture.
