Ingredients

Instructions

  1. Season turkey with salt and pepper. Brown in olive oil in a Dutch oven; remove.
  2. Sauté onion and garlic in the same pot until softened.
  3. Blend rehydrated chilies, almonds, pepitas, raisins, bread, tomato, and spices with a little broth until smooth.
  4. Add mole paste to the Dutch oven, cook 10 minutes, stirring constantly.
  5. Stir in remaining broth, chocolate, and brown sugar. Bring to a simmer.
  6. Return turkey to the pot. Cover and simmer on low heat for 2.5-3 hours until very tender.
  7. Remove turkey, shred meat from bones. Return shredded turkey to the mole sauce.
  8. Serve hot with rice, warm tortillas, and a sprinkle of sesame seeds.
Pro tip: Roasting the chilies briefly before rehydrating deepens their flavor for an even richer mole.
