Ingredients
- 2.5-3 lb turkey thighs or breast, bone-in, skin-on
- 1 tbsp olive oil
- 1 large onion, roughly chopped
- 4 cloves garlic, minced
- 2 dried ancho chilies, rehydrated, stemmed, seeded
- 2 dried mulato chilies, rehydrated, stemmed, seeded
- 1 dried pasilla chili, rehydrated, stemmed, seeded
- 1/4 cup blanched almonds
- 1/4 cup pumpkin seeds (pepitas)
- 1/4 cup raisins
- 2 slices stale bread, toasted
- 1 ripe tomato, roasted or broiled
- 1/4 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp anise seeds
- 1/2 tsp dried oregano
- 3 cups chicken broth
- 1 oz Mexican chocolate (such as Ibarra or Abuelita), chopped
- 1 tbsp brown sugar

Instructions
- Season turkey with salt and pepper. Brown in olive oil in a Dutch oven; remove.
- Sauté onion and garlic in the same pot until softened.
- Blend rehydrated chilies, almonds, pepitas, raisins, bread, tomato, and spices with a little broth until smooth.
- Add mole paste to the Dutch oven, cook 10 minutes, stirring constantly.
- Stir in remaining broth, chocolate, and brown sugar. Bring to a simmer.
- Return turkey to the pot. Cover and simmer on low heat for 2.5-3 hours until very tender.
- Remove turkey, shred meat from bones. Return shredded turkey to the mole sauce.
- Serve hot with rice, warm tortillas, and a sprinkle of sesame seeds.
