- 8 oz ground chorizo
- 6 large eggs
- 1/4 cup milk or cream
- Salt and black pepper to taste
- 4 large flour tortillas
- 1/2 cup shredded Monterey Jack cheese
- 1/2 cup canned black beans, rinsed and drained
- 1/4 cup salsa, plus more for serving
- Optional chopped cilantro, avocado slices
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add chorizo and cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes). Drain excess grease.
- While chorizo cooks, whisk eggs, milk, salt, and pepper in a bowl.

- Warm tortillas according to package directions. Lay out each tortilla.
