Ingredients
- 4 oz lo mein noodles
- 2 Tbsp butter
- 1/4 tsp crushed red pepper flakes
- 2 large eggs
- 1 Tbsp brown sugar
- 1 Tbsp soy sauce
- 2 Tbsp sriracha sauce
- 1 handful fresh cilantro (optional)
- 1 green onion (thinly sliced)
Instructions
- In a small bowl, mix together brown sugar, soy sauce, and sriracha until smooth. Set aside.
- Bring a pot of water to a boil, then cook the noodles until tender, about 3-4 minutes. Drain and set aside.
- While noodles cook, whisk eggs lightly in a bowl.
- Heat butter in a large skillet over medium heat. Add crushed red pepper flakes and pour in the eggs. Stir gently to scramble until just cooked but still moist. Remove from heat briefly.
- Add the drained noodles to the skillet with the eggs, then pour the prepared sauce over everything. Toss to coat the noodles evenly and warm through over medium heat for 1-2 minutes.
- Plate the noodles and garnish with fresh cilantro and sliced green onion before serving.
