Ingredients
- 1/4 cup soy sauce
- 2 Tbsp water
- 1 Tbsp toasted sesame oil
- 3 Tbsp brown sugar
- 1 Tbsp rice vinegar
- 1 tsp fresh ginger, grated
- 2 garlic cloves, minced
- 2 1/2 Tbsp cornstarch (divided)
- 1 Tbsp sesame seeds
- 2 Tbsp vegetable or canola oil
- 1 lb boneless skinless chicken thighs, cut into 1-inch pieces
- 1 large egg
- 1 pinch salt
- 1 pinch black pepper
- 4 cups cooked jasmine rice
- 2 green onions, thinly sliced
Instructions
- In a small bowl, combine soy sauce, water, toasted sesame oil, brown sugar, rice vinegar, grated ginger, minced garlic, 1/2 tablespoon cornstarch, and sesame seeds. Stir well and set this sauce mixture aside.
- In a separate large bowl, whisk the egg with 2 tablespoons cornstarch, salt, and pepper. Add the chicken pieces and toss until evenly coated.
- Heat the vegetable oil in a large skillet over medium heat until hot and shimmering. Arrange the coated chicken pieces in a single layer and let them cook undisturbed until the bottoms turn golden, about 3-4 minutes.
- Flip the chicken pieces gently, breaking them into smaller clusters as needed, and cook until browned on the other side and cooked through, about 4-5 more minutes.
- Pour the sauce over the chicken in the skillet and stir gently to coat. As the sauce heats, it will thicken and cling to the chicken, about 2-3 minutes. Remove from heat once thickened.
- Serve the sesame chicken over warm jasmine rice and garnish with sliced green onions for a fresh, vibrant finish.
Pro tip: Make sure your skillet is hot before adding the chicken to get a nicely browned crust and avoid overcrowding to keep the pieces crispy.
