Ingredients
- 2 lb boneless skinless chicken thigh fillets
- 3 large garlic cloves (minced)
- 1 tbsp white wine vinegar (or red wine/apple cider vinegar)
- 3 tbsp lemon juice
- 1 tbsp extra virgin olive oil
- 1 1/2 tbsp dried oregano
- 1 tsp salt
- black pepper (to taste)
- 2 cucumbers (grated and drained for tzatziki)
- 1 1/4 cups Greek yogurt (full fat preferred)
- 1 tbsp lemon juice (for tzatziki)
- 1 tbsp extra virgin olive oil (for tzatziki)
- 1 garlic clove (minced, for tzatziki)
- 1/4 tsp salt (for tzatziki)
- black pepper (to taste, for tzatziki)
- 3 tomatoes (deseeded and diced)
- 3 cucumbers (diced)
- 1/2 red Spanish onion (finely chopped)
- 1/4 cup fresh parsley leaves (optional)
- salt (to season salad)
- black pepper (to season salad)
- 4 pita breads or flatbreads (warmed)
Instructions
- In a zip-top bag, combine minced garlic, vinegar, lemon juice, olive oil, oregano, salt, and pepper. Add chicken thighs and massage to coat. Let marinate at least 2 hours or up to 12 hours in the fridge.
- Grate the cucumbers for the tzatziki, then wrap them in a clean towel and squeeze to remove excess moisture. Place grated cucumber in a bowl.
- Mix the cucumber with Greek yogurt, lemon juice, olive oil, minced garlic, salt, and pepper. Stir well and let flavors meld for at least 20 minutes.
- In a separate bowl, combine diced tomatoes, diced cucumbers, chopped onion, and parsley. Season with salt and pepper to taste and toss gently.
- Heat a grill pan or skillet over medium-high heat and brush with a little olive oil. Remove chicken from marinade and cook for 2–3 minutes per side until golden and cooked through. Let rest for 5 minutes.
- Slice the chicken if large. To assemble, place a warm pita or flatbread on parchment paper, layer on some salad, then chicken, and finish with a generous spoonful of tzatziki.
- Roll up the pita tightly, securing with the parchment if desired, and slice in half to serve. Enjoy a fresh, bright Mediterranean dinner that’s quick enough for a weeknight.
Pro tip: For the creamiest tzatziki, be sure to squeeze out as much cucumber liquid as possible to avoid a watery sauce.
