  1. In a small bowl, whisk together the soy sauce, oyster sauce, mirin, toasted sesame oil, and sugar (if using) to create the sauce.
  2. Heat the vegetable oil in a large skillet or wok over high heat. Add the minced garlic and cook for about 10 seconds until fragrant.
  3. Add the sliced chicken and stir-fry until it turns mostly white, about 2-3 minutes.
  4. Pour in the sauce mixture and cook for an additional minute to coat the chicken.
  5. Add the coleslaw mix and the white parts of the green onions. Stir-fry for about 1.5 minutes until the cabbage softens slightly.
  6. Push the ingredients to one side of the skillet, pour in the water, and nestle the ramen noodle blocks into the liquid.
  7. Let the water come to a simmer, then cook the noodles for about 45 seconds before flipping them over and cooking for another 30 seconds.
  8. Break up the noodles with a spatula, then add the bean sprouts and green parts of the green onions. Toss everything together vigorously for 1.5 to 2 minutes until the sauce thickens and coats the noodles.
