Quick Chicken Ramen Stir-Fry

Ingredients
- 1 tbsp vegetable oil
- 200 g chicken breast or thigh, sliced
- 2 garlic cloves, minced
- 2 instant ramen noodle blocks (discard seasoning packets)
- 200 g coleslaw mix (cabbage and carrots) (pre-shredded)
- 3 green onions, cut into 2-inch pieces (separate white and green parts)
- 1 cup bean sprouts (heaped)
- 1 cup water (250 ml)
- 1.5 tbsp light soy sauce
- 1.5 tbsp oyster sauce
- 1 tbsp mirin or Chinese cooking wine
- 2 tsp toasted sesame oil
- 1 tsp white sugar (optional if using mirin)
Instructions
- In a small bowl, whisk together the soy sauce, oyster sauce, mirin, toasted sesame oil, and sugar (if using) to create the sauce.
- Heat the vegetable oil in a large skillet or wok over high heat. Add the minced garlic and cook for about 10 seconds until fragrant.
- Add the sliced chicken and stir-fry until it turns mostly white, about 2-3 minutes.
- Pour in the sauce mixture and cook for an additional minute to coat the chicken.
- Add the coleslaw mix and the white parts of the green onions. Stir-fry for about 1.5 minutes until the cabbage softens slightly.
- Push the ingredients to one side of the skillet, pour in the water, and nestle the ramen noodle blocks into the liquid.
- Let the water come to a simmer, then cook the noodles for about 45 seconds before flipping them over and cooking for another 30 seconds.
- Break up the noodles with a spatula, then add the bean sprouts and green parts of the green onions. Toss everything together vigorously for 1.5 to 2 minutes until the sauce thickens and coats the noodles.
