- 500 g prawns (shrimp), peeled and deveined, tails on
- 0.5 tsp kosher salt
- 0.5 tsp black pepper
- 3 tbsp extra virgin olive oil (divided)
- 4 cloves garlic cloves, finely minced
- 40 g unsalted butter (cut into small cubes)
- 60 ml dry white wine
- 1 tbsp fresh lemon juice
- 1 tbsp fresh parsley, chopped (for garnish)
- 4 ears corn on the cob (husks removed)
Instructions
- In a bowl, combine the prawns with 1 tablespoon of olive oil, salt, and pepper. Toss gently to coat and let them marinate for 15 minutes.
- Thread the prawns evenly onto soaked wooden or metal skewers, then brush lightly with another tablespoon of olive oil.
- Preheat the grill or grill pan to medium-high heat. Place the corn ears directly on the grill, turning occasionally until charred and tender, about 10 minutes.
- Grill the prawn skewers for about 2-3 minutes per side until they turn pink and slightly charred.
- Meanwhile, in a small saucepan over medium heat, warm the remaining olive oil and add the minced garlic. Sauté for 30 seconds until fragrant but not browned.
- Add the white wine and let it simmer until reduced by half, about 1-2 minutes. Stir in the butter cubes and lemon juice, swirling until the butter is melted and the sauce is smooth.
- Remove the prawns from the grill and drizzle the garlic butter sauce over them. Sprinkle with chopped parsley.
