Ingredients
- 1 cup plain yogurt
- 2 Tbsp olive oil
- 4 garlic cloves (minced)
- 1/2 Tbsp dried oregano
- 1 medium lemon (zested and juiced)
- 1/2 tsp salt
- 1/4 tsp black pepper (freshly cracked)
- 1/4 bunch fresh parsley (roughly chopped)
- 3.5 lbs chicken pieces (bone-in or boneless)
Instructions
- In a bowl, mix together yogurt, olive oil, minced garlic, oregano, salt, and freshly cracked black pepper.
- Grate the lemon zest into the bowl and squeeze in the juice from half of the lemon. Stir until fully combined.
- Add the chopped parsley and mix it into the marinade.
- Place the chicken pieces in a large sealable bag or container and pour the marinade over them. Seal and toss to coat completely. Refrigerate for at least 4 hours or overnight for best flavor.
- When ready to cook, preheat the grill or grill pan over medium-high heat.
- Remove chicken from marinade, letting excess drip off. Grill chicken for about 6-8 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
