- 1 cup all-purpose flour
- 1 tbsp cornstarch

- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup mayonnaise
- 2 cloves garlic, minced
- 1 tbsp fresh lime juice
- 1 tbsp fresh parsley, chopped (for sauce)

Instructions
- Pat fish fillets very dry with paper towels. Cut into desired serving sizes.

- Dredge each fish fillet in the flour mixture, pressing to coat thoroughly. Shake off excess.
- Heat about 1 inch of vegetable oil in a large skillet over medium-high heat to 350°F (175°C).
- Carefully place fish in hot oil; fry 3-4 minutes per side, until golden brown and crispy.
- Transfer fried fish to a wire rack lined with paper towels to drain excess oil.
- For the sauce, whisk together mayonnaise, minced garlic, lime juice, chopped parsley, and water.
