- 600 g boneless rib eye steak (trimmed and sliced into thin strips)
- 2 tbsp vegetable oil (divided)
- 1 large onion (thinly sliced)
- 300 g mushrooms (sliced, preferably cremini or button)
- 40 g butter
- 2 tbsp all-purpose flour
- 500 ml beef broth (low sodium preferred)
- 1 tbsp Dijon mustard
- 150 ml sour cream

Instructions
- Flatten the steak strips slightly if needed, then season them lightly with salt and pepper.
- Heat 1 tablespoon of vegetable oil in a large skillet over high heat. Add half of the beef in a single layer and sear without stirring for 30 seconds. Flip and sear the other side for another 30 seconds. Remove cooked beef to a plate. Repeat with remaining beef using the other tablespoon of oil.
- Lower heat to medium-high and melt butter in the same skillet. Add onions and cook for about 1 minute until softened.
- Add the mushrooms and sauté until they turn golden brown, scraping up any browned bits from the pan for extra flavor.
- Sprinkle the flour over the vegetables and stir well. Cook for 1 minute to remove the raw flour taste.
- Gradually pour in half of the beef broth while stirring to combine, then add the rest of the broth. Bring to a gentle simmer.
- Mix in the Dijon mustard and sour cream until the sauce is smooth. Let it simmer for 3-5 minutes until thickened to a creamy consistency. Season with salt and pepper to taste.
- Return the seared beef along with any juices on the plate to the skillet. Simmer everything together for 1 minute, then remove from heat immediately to avoid overcooking the beef.
- Meanwhile, cook the egg noodles according to package instructions. Drain and serve the stroganoff over the noodles, garnished with chopped chives if desired.
