- 2 fresh peaches (medium, chopped)
- 1/2 cup blueberries (fresh or frozen)
- 1 1/2 cups milk
- 1 cup plain yogurt
- 1 large egg
- 1/4 cup brown sugar
- 2 cups old-fashioned rolled oats
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
- 1 tsp ground ginger
- 1/4 tsp ground cinnamon
Instructions
- Heat the oven to 350°F (175°C). Lightly grease an 8x8-inch baking dish. Toss the chopped peaches and blueberries evenly in the dish.
- In a mixing bowl, whisk together the milk, yogurt, egg, and brown sugar until smooth. In another bowl, combine the oats, baking powder, baking soda, salt, ginger, and cinnamon.
- Pour the dry ingredients into the wet mixture and stir gently until fully combined. Pour this oat mixture over the fruit in the baking dish, spreading evenly.
- Cover the dish with foil and bake for 20 minutes. Remove the foil and continue baking until the top is golden and set, about 25 more minutes.
- Allow to cool slightly before slicing. Serve warm on its own or with a splash of milk or yogurt.
