- 1 teaspoon curry powder

- 1 28-ounce can canned diced tomatoes (lightly drained)
- 1 cup brown or green lentils (rinsed)
- 4 cups vegetable broth
- 2 cups water
- 1 teaspoon salt (plus more to taste)

- 1 cup collard greens or kale (chopped, ribs removed)
- 1 to 2 tablespoons lemon juice (freshly squeezed)
Instructions
- Heat the olive oil in a large pot over medium heat until shimmering. Add the chopped onion and carrots, cooking for about 5 minutes until the onion becomes soft and translucent.
- Stir in the minced garlic, cumin, curry powder, and thyme; cook for 30 seconds until fragrant. Add the drained diced tomatoes and cook for 3 minutes, stirring occasionally to deepen their flavor.
- Add the lentils, vegetable broth, water, salt, red pepper flakes, and black pepper. Bring the mixture to a boil, then reduce heat to low, cover partially, and simmer for 25-30 minutes, or until lentils are tender but not mushy.
- Blend about half the soup until smooth using a blender or immersion blender, then return it to the pot for a creamy texture with some lentil pieces left intact.
- Stir in the chopped greens and cook for another 5 minutes until wilted and tender. Remove from heat and mix in lemon juice. Adjust seasoning with extra salt, pepper, or lemon juice as desired before serving.
