Ingredients
- 4 oz lo mein noodles
- 2 Tbsp butter
- 1/4 tsp crushed red pepper flakes
- 2 large eggs
- 1 Tbsp brown sugar
- 1 Tbsp soy sauce
- 2 Tbsp sriracha sauce
- 1 handful fresh cilantro (optional)
- 1 green onion (thinly sliced)
Instructions
- In a small bowl, combine brown sugar, soy sauce, and sriracha to create a spicy-sweet sauce. Set aside.
- Bring a pot of water to a boil. Add the noodles and cook until soft, about 4-5 minutes. Drain and set aside.
- Whisk the eggs lightly in a bowl.
- Heat butter in a skillet over medium heat. Add crushed red pepper flakes, then pour in the eggs. Stir gently to scramble until just cooked, avoiding overcooking.
- Add the drained noodles to the skillet with the eggs. Pour the prepared sauce over the top and toss everything together until evenly coated and heated through.
- Serve topped with fresh cilantro and sliced green onion for a fresh finish.
Pro tip: To prevent the eggs from overcooking, scramble them gently over medium heat and remove from heat just before they’re fully set.
